Gluten-Free Dairy-Free Morning Glory Cookies (Carrot Apple Cookies)

  • 3 cups shredded carrots I used a food processor to shred
  • 1 large apple organic apple recommended
  • 1 cup nut or seed butter I used a mix of almond butter and cashew butter
  • 1 cup almond flour oat flour also works
  • 2 tsp cinnamon
  • 1.5 tsp baking powder
  • 1 tsp sea salt
  • 2 eggs or 2 flax eggs
  • 4 tbsp maple syrup or honey optional for sweeter cookie

Optional Add-Ins

  • 1/4 cup dried fruit (i.e. raisins, cranberries, blueberries, etc)
  • 1/4 cup nuts or seeds (i.e. pumpkin seeds, sunflower seeds, walnuts, etc)
  • 1/4 cup shredded unsweetened coconut


  1. Preheat over to 350 degrees

  2. Shred carrots and apples using food processor or cheese grater

  3. Mix all ingredients in large bowl

  4. Place parchment paper or oil on baking sheet

  5. Use large spoon to scoop out ~16 cookies and press down slightly

  6. Bake for 25 to 30 minutes
